Hello Cedric, apparently none of the users on the mailing list has any experience with ElinOS - and neither do we. I guess the primary question is what kind of UI is available on such a machine and especially what the UI of your application is made of. If it is Java Swing or FX, chances are good that it can work. Web might work, SWT is limited to GTK3 and an x86 architecture. I guess you'll simply have to try.
